Fish Soup (Kalasupp)

Kalasupp, Estonian fish soup, is a flavorful and hearty dish made with fresh fish, vegetables, and often potatoes, simmered in a savory broth with herbs and spices, offering a taste of the Baltic Sea's bounty and a beloved delicacy in Estonian cuisine.

Ingredients (4 servings)

1 lb. white fish fillets, such as cod or haddock, cut into bite-sized pieces

1 large onion, chopped

2 carrots, peeled and diced

2 potatoes, peeled and diced

1 leek, cleaned and sliced

2 tablespoons butter

4 cups fish or vegetable broth

1 bay leaf

1 teaspoon thyme, dried

1 cup heavy cream

Black pepper, to taste

Salt, to taste

Fresh dill, for garnish (optional)

Preparation

In a suitable soup pot, melt the butter over medium heat. Stir in the chopped onion, diced carrots, diced potatoes, and sliced leek, and sauté for 5-7 minutes, until the vegetables are softened. Stir in the fish fillets to the pot and sauté for another 2-3 minutes, until they’re partially cooked. Pour in the fish or vegetable broth, and stir in the bay leaf and dried thyme to the pot. Bring the soup to a boil, then reduce the heat to low and let it simmer for about 15 minutes, until the fish and vegetables are fully cooked and tender.

Remove the bay leaf and discard. Stir in the heavy cream and cook for another 5 minutes, stirring occasionally. Liberally season the soup with black pepper and salt to taste. Remove the pot from the heat and let the soup cool slightly. Use an immersion blender or a regular blender to puree the soup until smooth, if desired. Reheat the soup over low heat if needed before serving. Garnish with fresh dill if desired, and enjoy your tasty Estonian Fish Soup (Kalasupp)!
